Did you know you can use any combination of nuts to make macarons? You aren't just limited to ground almonds - you can grind whatever nut you like to the same consistency and substitute it in. Here I have used ground pistachios to give my macarons a delicate flavour and gentle green colour. Sandwiched together with a simple lemon curd, they are great little treats that would also make a fabulous Mother's Day gift.
