Elf breakfast spaghetti no-bake Christmas cookies

Christmas is just around the corner, so it is officially time to cosy up on the sofa in front of your favourite Christmas movie! I love Elf, it is full of Christmas cheer (sing it loud for all to hear!) and puts me straight into the festive mood.

These Elf Breakfast Spaghetti Cookies are the perfect bake to celebrate with, to fill Christmas cookie boxes, to give to friends and family. The is no real spaghetti in these cookies: instead I’m using pretzel pieces for that delicious sweet and salty favour combination. They are topped with all the iconic toppings from the movie: M&M’s, chocolate sauce, sprinkles, marshmallows, maple syrup! We don’t have candy corn in the UK but if you live somewhere where it is easy to find, go ahead and add that in too.



Elf breakfast spaghetti no-bake cookies

Makes 16 cookies

Ingredients:

300g white chocolate

125g smooth peanut butter

150g pretzels, semi-crushed

1 tbsp maple syrup

1 tbsp M&M’s

1 tbsp mini marshmallows

25g dark chocolate, melted

M&Ms, marshmallows and sprinkles, to decorate

Method:

  1. Melt the white chocolate using a double boiler or in the microwave, making sure to stir every 10 seconds to stop it from burning.

  2. Stir the peanut butter and maple syrup, then add the roughly crushed pretzels and stir will to coat. Add the M&M’s and marshamllows, then stir again.

  3. Divide into small heaped portions between two lined baking trays, then drizzle with melted dark chocolate and top with sweets. Allow to set for 2 hours at room temperature, or chill for 30 minutes before serving.
